A mum has been called a ‘genius’ for her ‘lazy’ dinner which requires almost no cooking.

Hannah Grant from Canada shared a photo of two of her children enjoying a vegetable-filled feast on Facebook, with many Australian mums saying they wanted to try eating themselves.

Posting on the Lazy Mama Dinners Facebook group, the mum explained how she chopped vegetables, rinsed pasta in cold water and tossed it with sesame oil.

She explained that it was based on the Japanese hiyashi chūka meal, which consists of chilled ramen noodles with various toppings served in the summer.

“With all the items cut thin, it doesn’t look lazy, but everything is cold and raw and the noodles cook in two minutes after the water boils,” she wrote.

“The sauce is made up of just a few ingredients that are all measured in tablespoons and don’t need to be cut.”

“I usually do the cut in small dabs throughout the day and put it in the fridge until dinner time.

Her snap showed a bowl of cold pasta and a plate full of vegetables and chicken breast, with a dip in the middle.

She explained that she used angel hair rinsed in cold water, which she then mixed with sesame oil.

How to make a “lazy” hiyashi chūka

Ingredients

  • Angel hair or Japanese somen noodles
  • Cucumber
  • Chicken breast
  • black forest ham
  • Egg (cook a thin sheet of egg)
  • Carrot
  • Scallion
  • Tomato
  • Pickled ginger
  • For the sauce
  • 2T sugar
  • 1T ginger squeeze tube
  • 2T sesame oil
  • (Optional) 1/2 cup chilli oil
  • 4T chicken broth
  • 4T soy sauce

METHOD

  1. Bring to the boil then chill
  2. Serve all the vegetables and noodles with the sauce on the side for dipping

“Japanese somen noodles are better but I didn’t have any,” she explained.

On the tray, she put cucumber, chicken breast, black forest ham, egg. carrot, shallot, tomato and pickled ginger.

There was also a sauce consisting of two teaspoons of rice vinegar, four teaspoons of chicken broth, four teaspoons of soy sauce, two teaspoons of sugar, one teaspoon of ginger and two sesame oil.
